Pumpkin Chocolate Chip Muffins
It’s October! I can hardly believe it but I’m so glad that fall is finally here. I love fall. I love the trees changing colors, the crisp cool air, and most of all pumpkin! My family likes pumpkin, but since I can go a little overboard with my love of pumpkin we had to set a rule that I can not make anything with pumpkin until after the first of October. So… here we are and all I can say is bring it on! One of my all time favorite pumpkin recipes is for Pumpkin Chocolate Chip Muffins. This recipe uses only five ingredients and is so quick and yummy.
Now I know what you might be thinking, pumpkin and chocolate? That seems like a strange combination! You will be so surprised at the flavor though. The pumpkin is so mild you wouldn’t even know it was there if you hadn’t put it in yourself! I’ve tried this recipe with other cake mixes, but I like Chocolate the best. Spice Cake would be a close second though.
A few years ago I discovered using different things as an alternative to oil in a recipe. That’s about the time I found this recipe using Pumpkin instead of oil. - 1 Small Can Pumpkin
- 5 Eggs
- 1/2 Cup Water
- 1 Cup Chocolate Chips
- 1 Package Chocolate Cake Mix Devils Food or Chocolate Fudge

- Mix all ingredients together. Pour into muffin tins. (I like to use cup cake papers.) Bake at 350 degrees for 15 minutes.
