St. Patrick’s Day Cookies (Jell-o Cookies)
These are basically a sugar cookie that you use a box of Jell-O instead of sugar to make. They are so soft and chewy and can be made with any flavor of Jell-O you like.

  1. Preheat oven to 350. Cream together butter and Jell-O Add vanilla, egg, and milk and mix until fluffy. Add flour, baking powder, and salt and mix, but don’t overmix. I like to put the dough in the refrigerator for 10 to 15 minutes to make it easier to handle. As you scoop the cookies, roll each ball in granulated sugar before you put it on the pan, and flatten them a little bit with the bottom of a glass cup. (I use my small Pampered Chef scoop to make the perfect size cookie.) Bake for 8-10 minutes.
